German Potato Soup Recipe



3 pounds of potatoes
2 large carrots
1 onion
1 quart of vegetable broth
nutmeg, salt & pepper
vegetable oil


1. chop onion, heat oil in large pot and add onions. Then fry until glassy.

2. chop carrots and add to onions and fry until tender.

3. Peel and chop potatoes add to pot. Add 1 quart of water and dry vegetable broth (check vegetable broth package for directions)

4. close lid and let boil for 90 minutes

5. After potatoes are soft, mix content with hand mixer or mash manually.

6. Add sausage, and season to taste with the salt and pepper and 1 tablespoon of nutmeg.
