Kaiserschmarrn
(fluffy pancake) Recipe
4 eggs
50 g sugar
1 tablespoon grated lemon zest
4 tablespoons milk
100 g flour
250 g mascarpone
2 tablespoons butter
Salt
Confectioner sugar
1. Separate
2 of the 4 eggs in yolk and egg white. Put the 2 yolks into a mixing
bowl and add the remaining 2 eggs. Add a pinch of salt, the sugar and
the lemon zest and mix.
2. Add and mix first the milk, then the flour and as last the mascarpone.
Beat the egg white into foam with a mixer in a separate bowl. Add the
foam carefully to the dough. It should not become a consistent cream;
you should be able to see the parts of the egg foam among the dough.
3. Melt the butter in a large pan on medium heat. Fill in the dough
to a 1 inch think layer and spread evenly. Fry the bottom part for 3-4
minutes, and then cut the dough into small pieces - it does not have
to be evenly!
4. Now fry the little pieces on both sides so they're nice and crisp.
Add finally the confectioner sugar.
You have
several options with the dish. You can add raisins, fresh plums (the small
versions - my favorite), or just eat it with apple sauce and cinnamon
and sugar.
